Mini Bundt Bran Muffins Source: Nordicware
3 cups all-bran 1 cup boiling water 1/2 cup shortening 1 cup sugar 2 eggs 2 1/2 cups flour 2 1/2 tsp. soda 1/2 tsp. salt 2 cups buttermilk Soak 1 cup of all-bran in 1 cup boiling water. Add shortening, sugar and eggs. Mix well.
Combine flour, soda, and salt; add alternately with buttermilk to egg-bran mixture. Mix in remaining 2 cups all-bran. Spoon batter into greased Bundt Muffin Pan, filling each cup 2/3 full.
Bake at 400 degrees for 15-20 minutes or in Bundt Cupcake Pan for 10-15 minutes or until muffins test done. Turn out immediately on wire rack to cool. Batter may be refrigerated for 6 weeks. Do not freeze.
