I visited Australia in 1991 and was served a dish referred to as Lamington cake. However, my internet research has yeilded a chocolate coconut concoction and that's not what I had. Basically it seemed the be angel food cake cut into six inch bars, rolled quickly through a raspberry gelatin and then rolled in coconut. It was heavenly and I guess I could guess on the prep, but I was wondering if anyone has an official Lamington (fruit) recipe. I was thinking of taking the cake and using sugar-free gelatine and a topping of fresh strawberries/kiwi fruit/passionfruit with fat free Cool Whip for a lightweight summer pleasure...something like Pavlovian Lemming. Any help much appreciated.
