BEEF QUESADILLA PIE

Serving Size : 8

1 pound ground beef
1 cup salsa
1/4 cup ripe olives
1 can green chiles -- chopped
1 package pie crust -- 2 crust
1 1/2 cups cheddar cheese -- grated

brown beef in a large skillet.
Drain.
Stir in salsa, olives and chilies.

Place one pie crust on ungreased cookie sheet.
Spoon hamburger mixture evenly onto crust to within 3/4" of the edge.
Sprinkle cheese over beef.
Moisten edge of crust with a little water.
Put the other crust on top and seal the edges with a fork.
Cut several slits in top to allow steam to escape.

Bake at 425 degrees for 17-27 minutes or until crust is
golden.

Serve with optional toppings--any or all!

Shredded lettuce
chopped tomato
sliced green onion
sour cream
ripe olives
salsa
avocado slices or guacamole

HURRY UP HAMBURGER VEGGIE SOUP

1 envelope dry onion soup mix
1 lb. ground beef
1 46 oz. can V-8 juice
pepper to taste
5 c. sliced or cubed veggies of choice

Brown beef in a large saucepan. Drain off fat. Add remaining ingredients and simmer over low heat for 25-30 min or till veggies are tender. Serve with croutons or Parmesan cheese if desired.

Skyline Chili

2 to 2 1/2 lbs. of beef
1 tsp. olive oil
1 1/2 tsp. ground cinnamon
2 tsp. ground cumin
3 tbsp. chili powder
1/2 tsp. crushed red pepper
1 tsp. ground allspice
1 tbsp. salt
1 medium onion, chopped
4 cloves garlic, crushed
1 12oz. can tomato paste
1 15oz. can of tomato sauce
4 cups water
2 tbsp. vinegar
2 tsp. Worcestershire sauce (optional)
4 bay leaves
1 oz. block of unsweetened baking chocolate
1/2 tsp. ground cayenne peppers (optional)

Add olive oil to a large (4-6 quart) pot over medium heat. Add first 10 ingredients. Stir until meat is slightly browned. Add remaining ingredients. Bring to a boil, then simmer for 1 1/2 hours. Stir occasionally. REMOVE BAY LEAVES BEFORE EATING!!!!! Serves 6-8. Serve with grated cheese, chopped onions, kidney beans, and/or spaghetti.

For crock pot cooking, add all the ingredients together in the crock pot and stir. Cover and cook about 4 to 6 hours, stirring occasionally. REMOVE BAY LEAVES BEFORE EATING!!!!!!!

Can freeze leftovers for later meals.

San Antonio Casserole Bake
makes 6 servings

1 lb. lean ground beef
1 med. onion
2 garlic cloves, minced
4 T. oil
1 pkg. Taco Spice and Seasonings
2 c. water
2 t. chicken bouillon (Wylers)
1/4 c. flour
1 c. sour cream
1 can (7 oz.) diced green chilies
1 pkg. tortilla chips
2 c. grated Monterey Jack cheese or Cheddar Cheese
1/2 c. sliced scallions, including tops

In a skillet, brown meat till crumbly, drain and set aside. Saute garlic and onion in 4 T. oil till light golden. Add to meat. Add Taco spice and seasoning, blend well. In a small bowl combine bouillon, flour and water. Add to meat mixture, bring to a boil to slightly thicken liquid.

Stir in sour cream and chilies, blend thoroughly. In a lightly greased 9x13 inch baking pan, place half of the chips, top with half of the beef mixture, 1/2 of the cheese. 1/2 of the chopped scallions. Layer again with remaining ingred., ending with green onions. Bake at 375 for 20 mts. Let stand 5 mts. before cutting.

New England Style Chop Suey

1 lb lean sirloin
small green pepper chopped,
one small onion, chopped,
garlic powder, black pepper,
can of sliced mushrooms, drained
can of stewed tomatoes..with juice and sometimes...more water
One pound box of ziti cook accord. to box directions

cook meat and all ingredients and combine and mix together with drained pasta. Sprinkle Parmesan cheese over it and mix well.
Serve with garlic bread and small salad.

Mama Pacetti's Spaghetti with Meatballs and Sausage
This is an authentic recipe from the old countryside. Delicious!!!!

Meatballs:
1 lb. lean ground chuck
1 onion, minced
2 cloves garlic, minced
1/4 c. fresh chopped parsley
1/4 c. grated Parmesan cheese
1/2 c. fine dry bread crumbs
1 egg, beaten
1 t. salt
1/2 t. black pepper
1 t. Italian seasoning
1/4 t. oregano
2 T. olive oil

Mix ground chuck, onion, garlic, parsley, Parmesan, bread crumbs, egg, salt, pepper and herbs. You can add a little water if too dry. Shape into meatballs and brown in olive oil before adding to sauce.

Sauce:
2 onions, chopped
3 garlic cloves, minced
3 T. olive oil
1-2 pork chops or pork rib
1 lb. mild Italian Sausage cut into 2" pieces
2 28 oz. cans chopped tomatoes
1 T. fresh basil or 1 t. dried
1/4 c. fresh chopped parsley
1/2 t. crumbled thyme
1 t. salt
1/4 t. pepper
1 t. sugar
1/4 t. crushed dried red pepper
1 6 oz. can tomato paste
2 8 oz. cans tomato sauce
1/4 t. oregano
1/4 t. marjoram
1/4 t. rosemary
1 bay leaf
1 t. Italian seasoning
12 oz. cooked spaghetti
freshly grated Parmesan cheese

Brown the sausage and set aside. Saute onions, pork chops and garlic in large pot. Add tomatoes, paste and sauce and bring to a boil. Add next 13 ingredients, the browned meatballs, the browned sausage and simmer uncovered for 2 hours, stir occasionally.

Lolly's Meatloaf with Chili Grape Glaze

1/2 c. grated Parmesan Cheese
1 1/2 c. Italian Bread Crumbs
1 lb. ground sirloin
1 lb. ground beef
2 large eggs, beaten
1 med onion, chopped
1 med. green bell pepper, chopped
1 large garlic clove
4 fresh basil leaves
4 springs fresh parsley
3/4 c. ketchup
1/3 c. A1 Bold Steak Sauce
1 t. salt
1/4 t. black pepper
Glaze: 4 T. chili sauce
2 T. grape jelly
Place in bowl and whisk to blend well.

Place beef in large glass bowl. Mix with eggs, crumbs and Parmesan cheese. Blend with a wooden spoon at first. Place the chopped onions, peppers, garlic, parsley and basil in food processor. Process till minced fine. Blend with meat along with seasonings, steak sauce and ketchup. Shape into a loaf on a 13x 9 baking pan. Bake at 350 for 1 hour. After 40 minutes, glaze meatloaf and continue baking, glaze again 10 minutes later. When done, let sit for 10 minutes before cutting.

Gina's Mediterranean Stuffed Cabbage
serves 8

Sauce:
2 T. olive oil
1 large onion, chopped
3 garlic cloves, minced
1/3 c. dark brown sugar
2 T. honey
1 28 oz. can crushed tomatoes
1 14 1/2 oz. can Contadina diced tomatoes w/roasted garlic
1 8 oz.can tomato sauce
1 T. lemon juice
1/2 c. raisins
1/3 c. cranberry-orange Fruitlings pieces
handful Orange Essence Pitted Prunes

Filling:

1 large green cabbage
1 - 1 1/4 lb. ground sirloin
1 egg beaten
4 T. raw rice
1 T. minced shallot
2 T. chili sauce
4 T. water
1 t. salt
1/4 t. black pepper
Remove core from cabbage and separate the leaves carefully. Drop them one by one in a pot of boiling water and blanch for 5 mts. Drain and slip into a pot of cold water to cover.

Making Sauce:
In a large pot, saute onion till translucent. Add garlic and cook 2 more mts. Add sugar and honey and stir to dissolve. Add tomatoes with juice, sauce, lemon juice, and fruits. Cover and simmer while you make the filling.

Filling:
Combine the sirloin, egg, rice, minced shallot, chili sauce, water, salt and pepper and blend well. Place a heaping tablespoon in center of each leaf. Fold sides to cover meat and roll to close. Secure with a toothpick. Ladle some sauce to cover bottom of a 5 qt. corning casserole dish, place bundles carefully in and cover with sauce. Place covered casserole on a cookie sheet and put in 300 oven for 1 1/2 hours to simmer. Can be frozen for later use.

Gina's Chili
serves 8

2 lbs. ground sirloin
1 T. olive oil
1 large onion chopped
2 bell peppers, green and red, seeded and chopped
4 cloves garlic, minced
1 28 oz. can crushed tomatoes
1 28 oz. can peeled tomatoes
2 T. chili powder
1 t. oregano
1 t. salt
1 t. sugar
1/8 t. cayenne pepper (more if you want heat)
1 t. cumin
1 t. paprika
2 15 oz. cans kidney beans, 1 light and 1 dark with juices

garnishes: grated cheddar cheese

Brown beef, discard any fat. Set aside. In a skillet with olive oil, saute all veggies, add to beef in a pot with all other ingredients and cook on low for two hours.

I serve this with a garnish of grated cheddar cheese and corn bread squares slathered with butter! Yum!!

Dinner in a Pumpkin

1 small to med. pumpkin
2 tbsp vegetable oil
2 tbsp soy sauce
1 1/2 c. cooked rice
1 (4oz.) can sliced mushrooms, drained
1 (10 3/4 oz.) can cream of chicken soup
1 (8oz.) can sliced water chestnuts, drained
1 onion, chopped
1 1/2 - 2 lbs. ground beef
2 tbsp brown sugar

Cut off the top of the pumpkin and thoroughly clean out seeds and pulp. Paint an appropriate face on the front with a permanent marker. Preheat oven to 350. In a large skillet, sauté onions in oil till tender. Add meat and brown. Drain drippings, add soy sauce, brown sugar, mushrooms and soup. Simmer 10 minutes, stirring occasionally. Add cooked rice and water chestnuts. Spoon mixture into the cleaned pumpkin shells. Replace top and place entire pumpkin with filling on a baking sheet. Bake 1 hour or until inside of pumpkin is tender. Cooking time may vary up to 2 hours, depending on size of pumpkin. Place entire pumpkin on serving platter, remove lid and serve mixture plus meat of the pumpkin.

Cottage Style Meat Loaf
serves 6

lb. ground sirloin
1/2 c. ketchup
1/3 c. tomato juice
1/2 t. salt and pepper
1/8 t. cayenne pepper
2 eggs beaten
1 c. bread crumbs
1/4 c. finely mined onion
2 t. mustard
1 garlic clove, minced

Topping:
1/4 c. ketchup
1/2 t. mustard
2 t. brown sugar

Combine ketchup, tomato juice, salt, pepper, red pepper, eggs, bread crumbs, onion, garlic and mustard. Mix well. Add the meat and mix gently. Line a loaf pan with foil. Press in the meat. Combine topping ingredients and put over the meat. Bake at 400 for 45 minutes. Drain any fat and let rest for 5 min. before cutting.

Boston Market Meat Loaf

Meat Mixture
1 1/2 lb. Lean ground chuck
1/2 C. Minced onions
1/2 tsp. Garlic salt
3/4 C. Drained diced tomatoes
3/4 C. Plain bread Crumbs
1 Egg

Topping
3/4 C. Tomato sauce
2 Tbsp. Sugar

Mix all ingredients together in first list until well blended. Place in
a lightly greased Bread Pan and bake at 350 for 3/4hr. Remove from oven and drain excess grease from pan. Mix tomato sauce and sugar together and pour over the meatloaf and place back in the oven to finish baking until done about 1/2 hr depending on the oven.

Blarney Stone Cottage Pie

4. potatoes, peeled, and diced
1/4 cup skim milk
black pepper, to taste
1 c. shredded cheddar
1 t. paprika
1/3 c. parmesan cheese

1 lb. lean ground sirloin
1 large onion, finely chopped
3 garlic cloves, minced
1 large green bell pepper, chopped
3 medium carrots, chopped
1/2 cup green peas
1 medium tomato, chopped
1/4 cup fresh parsley
3/4 cup beef stock
1/2 tsp. salt
salt & black pepper, to taste
2 tbsp. Worcestershire sauce
1 tbsp. cornstarch
2 tbsp. cold water

Boil potatoes until tender. Mash together with skim milk, 1/2 c. cheddar cheese till smooth, season with salt and pepper ; keep warm.

Preheat oven to 350. Heat a heavy, nonstick skillet, at least 10 inches in diameter, over medium-high heat. Add ground beef and saute, stirring occasionally, 4 to 5 minutes, or until meat is no longer pink. Pour contents of pan into a bowl and set aside. Add onion, garlic & bell pepper and cook until veggies are limp, 4 to 5 minutes. Add drained meat, carrots, peas, tomato, parsley, beef stock, salt, pepper and Worcestershire sauce. Simmer, uncovered, 15 minutes.

Dissolve cornstarch in water and stir into meat mixture. Spoon into an ungreased 9x11x2-inch baking dish. Spread mashed potatoes over the surface, using a fork for texture. Sprinkle the other 1/2 c. cheddar cheese over top and sprinkle parmesan and dust with paprika. Bake 30 to 35 minutes, or until lightly browned.

NOTE: Assemble this easy entree ahead of time and bake it just before serving.

1 pound ground beef
1 onion, chopped
1 green bell pepper, chopped
4 slices crisp cooked bacon, crumbled
1 1/2 cups pizza sauce
3 tomatoes, diced
4 ounces shredded Cheddar cheese
2 eggs
1 cup milk
1 tablespoon vegetable oil
1 cup all-purpose flour
1/4 teaspoon salt
4 slices crisp cooked bacon, crumbled

Preheat oven to 400 degrees F (200 degrees C).

In a large saucepan over medium high heat, saute the
beef, onion and bell pepper until beef is browned. Stir in
the 6 slices crumbled bacon and pizza sauce. Spoon
mixture into an ungreased 9x13 inch pan. Sprinkle with
tomatoes and top with the cheese.

In a separate bowl, beat the eggs slightly. Add the milk
and oil and mix well, then add the flour and salt and
beat for 2 minutes at medium speed. Pour evenly over
the meat mixture. Sprinkle with the remaining bacon.

Bake at 400 degrees F (200 degrees C) for 20 to 30
minutes, or until topping is lightly puffed and deep,
golden brown.

Makes 6 servings

Army SOS Creamed Ground Beef
Prep Time: approx. 10 Minutes

1 pound ground beef
1/4 cup all-purpose flour
1 cube beef bouillon
3/4 teaspoon salt
1 pinch ground black pepper
2 1/4 cups milk
1/4 teaspoon Worcestershire sauce

Brown beef in a large skillet over medium high heat. Stir
in flour, bouillon, salt and pepper. Saute all together for
about 5 minutes or until flour is absorbed. Gradually stir
in milk and Worcestershire sauce. Bring all to a simmer,
stirring constantly. Cook until thickened, about 5 to 10
minutes. Serve hot!

Zesty Porcupine Meatballs

1 egg
2 (10.75 ounce) cans condensed tomato
soup
1/4 cup instant rice
1/4 cup chopped onion
1 tablespoon chopped fresh parsley
1 teaspoon onion salt
1/4 teaspoon ground black pepper
1 pound lean ground beef
1/4 cup Worcestershire sauce
1 tablespoon vegetable oil

Lightly beat egg with a fork, then add a heaping
tablespoon of the soup and mix lightly. Mix in onion,
parsley, onion salt and pepper. Stir in the ground beef
and mix well with hands. From mixture into 1 1/2 inch
round meatballs.

Heat oil in a large skillet over medium heat. Add
meatballs and brown on all sides.

Combine remaining soup with Worcestershire (you can
increase or decrease Worcestershire to your liking), stir
until smooth, then spoon over meatballs. Cover with lid
and simmer for 20 to 30 minutes, stirring every few
minutes.

Makes 4 to 6 servings

2 pounds ground beef
1 egg
1 onion, chopped
1 pinch salt
1 (12 fluid ounce) can or bottle chili sauce
2 teaspoons lemon juice
1 cup grape jelly

In a large bowl, combine beef, egg, onion and salt. Mix
together, then shape into little balls.

In a slow cooker combine chili sauce, lemon juice and
grape jelly. Stir in meatballs and cook on high for 4 to 5
hours.

Makes 6 to 8 servings

Ingredients
1 pound ground beef
1/4 cup dried bread crumbs
1/2 cup chopped, peeled apple
1 egg
1 teaspoon onion salt
2 tablespoons vegetable oil
1 cup water
1 tablespoon brown sugar
1 (.75 ounce) package dry brown gravy mix

In a large bowl, combine ground beef with chopped
apple, bread crumbs, egg and onion salt. Divide into 18
to 20 meatballs. Roll each one between your hands to
shape into a ball.

Heat a large skillet and add oil. Cook the meatballs until
browned; pour off fat.

Stir in water, brown sugar and gravy mix. Cover and
simmer for 15 minutes

Makes 18 to 20 meatballs

Prep Time: approx. 20 Minutes

1 pound ground beef
1 1/2 cups hot water
2 cups mashed potatoes
1 tablespoon paprika

Preheat oven to 425 degrees F (220 degrees C).

In a medium skillet, brown beef over medium high heat
and drain. Stir in water and dry soup mix and let simmer
all together for 5 minutes.

Pour mixture into a 9x13 inch baking dish. Top with
potatoes and sprinkle with paprika. Bake in the
preheated oven for 15 to 20 minutes and serve hot.

Makes 4 to 6 servings

Prep Time: approx. 5 Minutes
Cook Time: approx. 40 Minutes

1 tablespoon vegetable oil
2 onions, sliced
1 pound ground beef
5 potatoes - peeled and cubed
salt and pepper to taste
1 (10.75 ounce) can condensed cream of
mushroom soup
1/4 cup water
paprika to taste

Preheat oven to 350 degrees F (175 degrees C).

Heat a large skillet over medium heat and pour in oil.

Saute onion in oil until browned, 5 to 10 minutes. Set aside. In the same skillet over medium heat, saute the ground beef for 5 to 10 minutes, or until browned.

Place a layer of potatoes into a lightly greased 9x13 inch baking dish. Sprinkle with salt and pepper to taste and then spread a layer of ground beef over the potatoes, followed by a layer of onions.

Repeat layers, ending with potatoes. In a medium bowl, combine the soup with the water. Mix well and pour over the casserole mixture. Sprinkle with paprika to taste.

Cover pan and bake in preheated oven for 1 hour.

Makes 4 to 6 servings

1 pound ground beef
1 onion, chopped
2 cloves garlic, minced
1 tomato, sliced
1/2 teaspoon garlic salt
1 teaspoon ground black pepper
1 teaspoon dried oregano
1 cup shredded Cheddar cheese
1/2 cup buttermilk baking mix
1 cup milk
2 eggs

Preheat oven to 400 degrees F (200 degrees C). Grease a 10 inch deep dish pie plate.

Heat a large skillet over medium heat. Add ground beef, onion, and garlic; cook and stir until beef is brown. Drain off fat. Spread into prepared pie plate.

Sprinkle meat with salt, black pepper, and oregano.

Arrange tomato slices over meat, spread shredded cheese on top.

In a small bowl, mix together baking mix, milk and eggs. Pour over cheese.

Bake for about 25 minutes, or until knife inserted in center comes out clean. Cool for 5 minutes before
serving.

1 tablespoon vegetable oil
1 onion, chopped
1 pound ground beef
1 teaspoon dried basil
1 clove garlic, minced
1 cup green beans, drained
1 cup tomatoes, diced
2 potatoes, cooked and mashed
1 egg, beaten
1/2 cup water
1/4 cup shredded Cheddar cheese, optional

Preheat oven to 350 degrees F (175 degrees C).

Heat oil in a large skillet over medium heat. Add onion and saute for 5 minutes. Add the ground beef and basil and saute for 5 more minutes. Add the garlic, green beans and tomatoes, stir well, and simmer for 5 minutes.

Pour mixture into a 2 quart casserole dish. In a separate medium bowl, combine the potatoes with the egg and water. Mix well and spread over meat mixture.

Bake at 350 degrees F (175 degrees C) for 15 to 20 minutes, or until potatoes start to brown on top.

Sprinkle with cheese, if desired, 5 minutes before done cooking.

Makes 4 servings

Cabbage Roll Casserole
Prep Time: approx. 10 Minutes

2 pounds ground beef
1 cup chopped onion
28 ounces tomato sauce
3 1/2 pounds chopped cabbage
1 cup uncooked white rice
1 teaspoon salt
2 (14 ounce) cans beef broth

Preheat oven to 350 degrees F (175 degrees C).

In a large skillet, brown beef in oil over medium high heat
until redness is gone. Drain off fat.

In a large mixing bowl combine the onion, tomato sauce,
cabbage, rice and salt. Add meat and mix all together.
Pour mixture into a 9x13 inch baking dish. Pour broth
over meat mixture and bake in the preheated oven,
covered, for 1 hour. Stir, replace cover and bake for
another 30 minutes.

Makes 6 to 8 servings
