CHOCOLATE MOUSSE (delicious) Servings: 12
4 cups milk, divided 1 cup sugar 3 egg yolks 1 1/2 oz. cornstarch 1 1/2 lbs. Hershey's Semi-sweet Baking Chocolate 1 1/2 pints heavy cream, whipped
Melt chocolate in double boiler over hot water; set aside.
In a saucepan, mix sugar with most of the milk (reserving a small amount of the milk to mix with the eggs and cornstarch) over low heat and bring to a boil.
Lower heat to barely simmering, while beating the egg yolks.
In a small bowl, beat egg yolks with the balance of the milk, gradually adding the cornstarch.
Combine this mixture with the boiling milk and sugar. Continue to cook over low heat, stirring constantly, until mixture reaches the consistency of custard.
Add melted chocolate. Remove from heat and cool.
When mixture is thoroughly cool, fold in whipped cream. Spoon into dessert glasses and chill.
