Fruitcake Cookies
1/4 cup butter 1 1/2 cups sifted flour 1 1/2 tsp. cinnamon 1 lb. pecans, chopped 1 cup light brown sugar 1 1/2 tsp. baking soda 1/2 tsp. nutmeg 1 container mixed fruit 3 eggs, beaten
Cream butter, gradually beating in sugar.
Add eggs, one at a time, beating well after each egg.
Sift flour with soda and spices. Add to butter/sugar/egg mixture.
Drop from teaspoon onto greased cookie sheet. These do not spread much when baking, so you can place them close to each other.
Bake at 325 degrees for 12 minutes.
Note: Makes approximately 100 cookies - they freeze very well.
