ORANGE PORK STEAKS
6 blade or arm bone pork steaks (about 2 1/2 lbs.) 4 medium sweet potatoes, peeled and cut in 1/2-inch thick slices 2 medium oranges, divided use 1/2 cup brown sugar dash ground cinnamon dash ground nutmeg salt fresh parsley (optional, for garnish)
Trim excess fat from steaks. In skillet cook trimmings till 1 tablespoon fat accumulates; discard trimmings. Cook steaks slowly just till browned; sprinkle with salt.
In a 13x 9-inch baking dish arrange sweet potatoes.
Slice one of the oranges thinly; place atop potatoes. Cover with steaks.
Squeeze remaining orange; add water to juice to measure 1/2 cup. Combine orange juice, brown sugar, 1/8 teaspoon salt, and spices. Pour over steaks.
Bake, covered, at 350 degrees F for 45 minutes. Uncover; bake 30 minutes more. Garnish with parsley, if desired.
