Mini Cheesecakes
3 eggs
16 oz. cream cheese
1/2 cup sugar
1 tsp. vanilla
Vanilla Wafers
2 cans cherry pie filling
Whip first 4 ingredients in blender. Put 1 wafer in a muffin paper liner in muffin pan. Pour mixture into each liner. Bake at 350 degrees until top is light brown and springy. Cover each cake with cherry pie filling, approximately 3 cherries for each cake.
