BUTTER PECAN POPCORN8 cups popped popcorn (1/3 to 1/2 cup unpopped)
Nonstick spray coating
1/2 cup broken pecans
2 tablespoons margarine or butter
1/3 cup light-colored corn syrup
1/4 cup instant butter pecan or butterscotch pudding mix
3/4 teaspoon vanilla
Discard any unpopped popcorn kernels.
Spray a 17x12x2-inch roasting pan with nonstick spray coating. Place the popped corn and pecans in the pan.
Place popcorn mixture in a 300 degree F oven to keep warm while making coating.
TO MAKE THE COATING:Melt the margarine in a small saucepan. Remove from heat. Stir in the corn syrup, pudding mix, and vanilla.
Pour coating over popcorn mixture. Gently toss the mixture with a large spoon to coat.
Bake popcorn mixture in the 300 degree F oven for 16 minutes, stirring halfway through baking.
Turn mixture out onto a large piece of foil. Cool.
Break into large pieces. Store, tightly covered, in a cool, dry place for up to 1 week.
