HOT WATER CORN BREAD

1 1/2 cups cornmeal
1 tsp salt
1 1/2 cups boiling water
1 egg, beaten
4 tbsp margarine, melted
fat (for frying)

Pour boiling water over cornmeal and salt; stir to thick mush. Cool.

Add egg and margarine to cooled cornmeal mixture.

Drop by spoonfuls into a little hot fat in a skillet and brown on both sides.

Makes 6 servings
