BASIL-BAKED RED POTATOES

6 medium red potatoes, halved*
1/4 cup finely chopped green onions
2 tbsp chopped fresh basil leaves (or 2 tsp dried)
2 tbsp vegetable oil

Heat oven to 350 degrees F. Spray 13x9-nch rectangular pan with nonstick cooking spray.

Place potatoes in pan. Sprinkle with onions and basil. Drizzle with oil; stir to coat.

Bake uncovered about 1 1/4 hours, stirring occasionally, until
potato skins are crispy and potatoes are tender.

*Keep the skins on! The potato peel has lots of flavor and nutrients so don't remove them if you don't have to.
