This is quite good, and it's easy. It reminds me of Sicilian-style pizza.
2 cans buttermilk biscuits 1 lb lean ground beef 1 (15 oz.) can pizza sauce 2 cups shredded mozzarella 1 cup shredded cheddar
Separate tube of biscuits into individual biscuits and cut each circle into quarters. Coat a 13x9-inch pan with non-stick spray. Spread the quartered biscuits evenly across the bottom of the pan.
Brown ground beef in large skillet; drain. Mix in pizza sauce. Spread the sauce mixture over the biscuits.
Bake at 400 degrees (F) for 25 min. Top with the cheeses and return to oven. Bake an additional 5-10 min, or until cheese is melted and bubbly. Let stand 5 min before serving.
Note: I replaced half of the ground beef with Italian sausage (hot or sweet) and I found that making my own drop biscuits (from Bisquick) to which I added minced garlic, oregano and parsley (about 2 cloves garlic, 1 tsp. oregano and 1 tbsp. parsley) tasted even better.
