CAJUN CHICKEN WITH FETTUCINIFOR THE SAUCE:1/2 cup (1 stick) butter 11/2 cups half-and-half 1/2 teaspoon Cajun seasoning 1/2 cup freshly grated Parmesan cheese FOR THE DISH:4 boneless, skinless chicken breasts, 4 ounces each 2 tablespoons Cajun seasoning 1/4 pound (1 stick) butter 1 pound fresh fettucini, cooked and drained 1/2 cup buttered bread crumbs TO PREPARE THE SAUCE:Melt 1/2 cup butter in medium-sized saucepan; add half-and-half and 1/2 teaspoon Cajun seasoning. Whip this mixture with a metal whisk as it comes to a boil. Add Parmesan cheese, whipping until cheese is melted. Set sauce aside. TO PREPARE THE CHICKEN:Pound chicken breasts to 1/4-inch thickness; coat with 2 tablespoons Cajun seasoning, working well into the chicken. Heat 1/4 pound butter in heavy saucepan; saute breasts in butter for 2 to 3 minutes per side, until just firmly cooked. TO SERVE:Place chicken breasts on a heated serving plate; roll large forkfuls of fettucini and place one atop each breast. Pour sauce over all and top with bread crumbs.
