HALIBUT WITH GREEK-STYLE GARLIC SAUCE
6 halibut steaks, each 4 to 6 ounces, thawed if necessary Salt and black pepper 2 tablespoons chopped parsley Greek-style garlic sauce (recipe follows)
Season halibut with salt and pepper to taste. Sprinkle each steak with 1 teaspoon parsley.
Broil 10 minutes per inch of thickness, 4 to 6 inches from heat, or until fish flakes when tested with a fork.
Serve each halibut steak with a heaping spoonful of the Greek-style garlic sauce. GREEK-STYLE GARLIC SAUCE Makes 1 1/2 cups
1 cup plain low-fat yogurt 1/2 cup chopped toasted almonds 3 tablespoons mayonnaise 1 tablespoon chopped fresh oregano (or 1 teaspoon dried oregano) 2 teaspoons chopped parsley 2 cloves garlic, minced 1 teaspoon fresh lemon juice
Whisk together all ingredients until well combined.
