I fiddled around with a recipe yesterday to use up what we had hanging around in the refrigerator and freezer before leaving on vacation. Served this to a vegetarian friend and it was quite a hit. I used frozen extra-firm tofu, defrosted and drained. I think it adds a different texture than the fresh tofu. The extra sauce is especially good to have as an accompaniment when you are reheating any leftovers, as the tortillas and tofu seem to soak up the sauce, making them drier when reheated. Enjoy!

TOFU ENCHILADAS WITH GREEN CHILI SAUCE*

1/3 of a large onion, cut into wedges (thick or thin as desired
10 oz. can green chili enchilada sauce*
10.5 oz tofu, extra firm, cut in small cubes
2 oz. shredded mild cheddar, moterary jack or mozarella (or whatever cheese you have on hand, I used a mixture of leftover low fat 2% cheese and it was wonderful)
1/4 cup salsa of your choice
8 corn tortillas
10 oz. can green chili enchilada sauce*
a handfull of green olives, chopped
extra shredded cheese for topping
optional accompaniments:
sour cream
chopped cilantro
extra salsa
extra warmed green chili enchilada sauce*

Heat oven to 400. Spray a small casserole dish with non-stick cooking spray. Cook onion wedges with a small amount of water on high in microwave or saute in non-stick skillet with a bit of water until limp. Add enchilada sauce and bring to a boil, reduce heat and keep warm. In a bowl,mix tofu, cheese and salsa together gently. To assemble enchiladas:dip each tortilla into the warm sauce/onion mixture. Lay tortilla on flat surface and spoon about 3-4 Tablespoons of tofu mixture on tortilla. Roll tortilla up and place seam side down in prepared casserole dish. Repeat for remaining tortillas and filling. Pour remaining enchilada/onion sauce over enchiladas and top with olives and a bit more shredded cheese. Bake approximately 20 minutes until sauce is bubbly and enchiladas are heated thru. Serve with sour cream, chopped cilantro, salsa and more warm green enchilada sauce on the side if desired.

*red enchilada sauce may be substituted for the green if deisred
