I made chicken fajitas tonight, with this wonderful marinade, and they were really good!
Chicken Fajita Marinade
Juice of 2 lemons Juice of 1 orange 1 yellow onion, sliced 2 cloves garlic, minced 1-2 tsp. salt 1 tsp. chili powder 1 Tbsp. dry red pepper flakes 1/2 cup olive oil 2 tsp. oregano 2 tsp. ground black pepper 1 tsp. ground cumin
Combine all marinade ingredients; whisk until emulsified. Marinate chicken for at least 2-3 hours, overnight is better. Grill chicken about 8-10 minutes per side. Let chicken rest about 5 minutes, slice. Serve with warm tortillas, shredded cheese, sour cream, and guacamole, as desired.
