A good friend called today - she had been given a 30# striper today and said if I'd come over and filet and skin it, we could have half of it. An offer I couldn't refuse, since I love doing that anyway.
So tonight we had the most delicious fresh fish with a spinach salad and basmati rice patties. Yummy.
Cut the fish into servings sizes. Melted butter in bottom of casserole dish, dredged the fish on both sides in the butter, then salted/peppered and squeezed a lemon over all. Topped with Italian flavored Panko crumbs and a little more melted butter over that. Baked at 400 for 20 minutes. So good. |
