Hi Sandy: Wow, that's alot of people over. I wish you all the luck. I had a party for 20 people two weeks ago. It went extremely well. I cooked all the food but hired someone to serve and clean dishes. She was extremely helpful but kept kicking me out of my kitchen the entire evening. It was strange. I will not do that again but at least I got to talk to my guests. I too needed recipes to make that could be frozen in advance. One recipe that always is a big hit is my grandmother's butterball cookies. I make these up to one month in advance, freeze them and then take them out the evening before the party. They are really easy and I serve them is pretty foil muffin tins:
Butterballs
2 sticks unsalted butter 1/2 cup confection sugar 1/2 teap. vanilla 1 3/4 cup flour 1/2 cup chopped walnuts
Beat butter and confection sugar until blended and fluffy. Add vanilla and combine. Add flour and blend and then blend in walnuts. Chill overnight. Spoon balls in hand. (I usually make these the size of walnuts.) Bake at 350 for 20 minutes. Let cool and then roll in powdered (confection) sugar. I freeze them in air tight containers with wax paper between layers. Never combine two different cookie recipies in the same container because flavors tend to blend. Thaw out the night before your party. Good luck... Christine
