Creamed Cucumbers

"This recipe has been in our family for several generations. It was passed down to my Mother from her mother and then on to me. I have passed it along to my daughters. It is a must for all family get-togethers on any holiday! I hope you will enjoy it as much as we do."

2 cucumbers

Vinegar

Pinch of salt

Mayonnaise

1. Peel cukes and coarse grate or very thin slice them. Sprinkle the salt over the cukes and stir to mix.

2. Add enough vinegar to cover the cukes and refrigerate for several hours or over night.

2. When ready to serve, completely drain the vinegar off and add enough mayonaise to give a creamy consistency.

Serve and enjoy.
