Spicy Butternut Squash |

1 small butternut squash, peeled, 3 slices bacon 2 teaspoons fresh lime juice 1/2 teaspoon Tabasco, or to taste |
1. Steam squash on a steamer rack set over boiling water, covered, until tender, about 5 to 8 minutes 2. In a skillet, cook bacon over moderate heat until crisp, reserving 2 teaspoons bacon fat. 3. Crumble bacon into a bowl and toss with squash, juice, Tabasco, reserved bacon fat, and salt and pepper to taste. Serves 2 Note: I've made it without the Tabasco sauce and simply loved it. |
