Sweet Potato Loaf Cake

1 1/2 cups sugar

1/2 cups vegetable oil

2 eggs

1/3 cups water


1 3/4 cups all purpose flour

1 1/2 teaspoon ground cinnamon

1 teaspoon nutmeg

1 teaspoon soda

1/2 teaspoon salt


1 cup mashed, cooked
sweet potatoes

1/2 cup chopped pecans

1/2 cup raisins

1. Combine sugar, oil, eggs, and water. Beat at medium speed with electric mixer.

2. Add next 5 ingredients, mixing just enough to moisten.

3. Stir in potatoes, pecans, and raisins.

4. Spoon batter into 2 greased and floured loaf pans (or coffee cans).

5. Bake at 350F degrees for 1 hour. Let cool 10 minutes, remove from pans or cans and complete cooling.
