Recipe: South Beach Diet Oatmeal Cookies (Phase 2)

SOUTH BEACH DIET OATMEAL COOKIES
(Phase 2)

DRY INGREDIENTS:
1 1/2 cups rolled oats
1 cup oat flour
3/8 tsp baking soda
1/2 tsp cinnamon
1/4 tsp salt
1/4 tsp all spice
1/4 tsp ground cloves
BUTTER MIXTURE:
1/2 cup butter (1 stick)
1/2 cup brown sugar twin
1/8 cup Splenda
1 egg
1/4 to 1/2 cup chopped walnuts (to personal taste, omit if not desired)
1/4 Cup low fat milk

Preheat oven to 350 degrees.

Mix the dry ingredients together in a medium sized bowl and set aside.

Cream together butter and sugar/Splenda in a large bowl. Add egg.

Stir in dry ingredients and mix well. Add nuts (if desired). Add enough milk to drop from spoon onto greased cookie sheet - you may not need the entire 1/4 cup of milk.

Bake at 350 for 10-15 minutes.

Notes: You may have to tweak the Sugar twin and Splenda amounts to suit your personal taste. The oat flour and the rolled oats add fiber and protein to this recipe. Oat fiber is also sweeter tasting than regular white flour, which may also change how much Sugar Twin and Splenda you use. I would be interested to hear from our experienced stevia users to see how that might work, too

My mom & I make our oat flour by pureeing rolled oats in our food processors... Hope you like, please let me know how it goes!!!
