Bryan, I used to work for Golden Skillet and it would be difficult to replicate their chicken at home as they used custom-made pressure deep fryers. The breading and batter mixes were proprietory and a closely guarded secret - they arrived at the stores in bags and weren't prepared on site. However, there are a couple of parts of the process that may help. First the chicken is marinated in salt water for 24 hours. The pieces are dipped in batter, which is really a flour/water mixture and pretty soupy in consistency. The moist chicken is then dipped into the breading mixture, and deep fried in peanut oil. Try the marination and peanut oil; that might help your chicken.
