I couldn't find the soy glaze recipe on the Internet. There are only two recipes from the Rumbi Island Grill on the Internet.

Volcano-Blackened Mahi
Restaurant: Rumbi Island Grill
Source: KTVK, Phoenix, AZ

6 oz. mahi filet
Blackening Spice (found at grocery store)
Vegetable oil
1/4 cup uncooked rice (white or brown)
1 cup mayo
1/3 cup honey-lime dressing (found at grocery store)
1/2 tsp. minced garlic
Pico del gallo or fruit salsa

For citrus aioli: Blend mayo, honey-lime dressing and garlic in a food processor or blender until creamy. Set aside.

For mahi-mahi: Dredge mahi with Blackening Spice on both sides of filet. Pour 1 oz. vegetable oil in saut pan and heat oil for 20 seconds. Carefully place mahi in pan and saut for 2 minutes on one side, flip and saut for 3 minutes on the other side. Remove mahi from pan and place filet on a bed of cooked rice. Drizzle with citrus aioli and top with pico de gallo or fruit salsa.
