I just made 55 baked potatoes for a group of high school girls for a Valentine's classroom lunch and have a few tips. I did NOT wrap the potatoes in foil because Alton Brown (from the Food Network) and several other internet postings said not to. Alton's no-foil recipe is great for a family dinner, but NOT for a crowd. Here's why: Once mine were done baking without foil (about 1 hr. 45 minutes at 425 degrees in two ovens), I placed them in a rolling cooler to transport to the school. When I served them, they were still hot, but all the steam generated while sitting in the cooler made them very wet and shriveled like prunes. I think they would have retained their shape better and tasted just as good if they had been wrapped in foil in the first place. I was a little embarrassed to serve such ugly potatoes, but the girls ate every last one of them anyway. I guess since I split them and "pooched" them out as they went through the buffet, they didn't notice. Oh well. Next time I bake 55 potatoes (if ever), I'll definitely use the foil method.
