Hi Shona,

I have a very simple and traditional recipe from Sardinia, where I come from.
You only need fresh tomatoes, garlic, basil, oil, salt.
Chop the tomatoes and crush the garlic. Heat all the ingredients (except basil) until tomatoes get creamy and the sauce is homogeneous (Keep the lid, low gas - alternatively you can microwave it for a few minutes). Turn off the gas and add the basil. This sauce is delicious either with pecorino cheese or without any cheese at all. We call it "pill'e pisu", which means "skin and seeds" (ref. to the tomatoes).
