My family loves this one, and it's really simple.
Souper Meat Loaf
2 lbs. ground beef
1 can (10 3/4 oz.) Campbells condensed cream of mushroom soup, divided
1 pouch dry onion soup mix
1/2 c. dry bread crumbs
1 egg, beaten
1/4 cup water
Mix beef, 1/2 cup of mushroom soup, the onion soup mix, bread crumbs and egg. Firmly shape into 8 x 4 inch loaf.
Bake at 350 for 1 1/4 hours or until no longer pink. Spoon off fat from meat loaf, reserving 2 T. of drippings.
In saucepan over medium heat, heat remaining mushroom soup, water and reserved drippings to boiling, stirring occasionally. Thin sauce with additional water to desired consistency.
