Dayle.
This is one of our very favorite recipes. I also have a pumpkin pie recipe that has no dairy in it too, if you would like it.

TOFU CHEESECAKE

1 1/4 cup graham cracker crumbs
1/4 cup softened margarine
1 Tbsp. sugar
1/2 tsp. cinnamon
1/2 cup boiling water
1 - 10 oz. pkg of lemon gelatin or strawberry or cherry
2 Tbsp. lemon juice
1/2 tsp. lemon rind (omit if using other flavors)
1 - 1lb. (454g.) pkg. MediumFirm Tofu, well drained, crumbled
1 - 10 oz. container of Cool Whip, thawed

Combine crumbs, margarine,sugar and cinnamon and pat into bottom of 8" round springform pan. Set aside.
Pour boiling water into blender, add gelatin and blend until dissolved.
Add lemon juice, rind, half of tofu. Blend until smooth. Add remaining tofu gradually and blend until smooth. Pour mixture into a large bowl and fold in Cool Whip. Pour over crust and chill until set. Can garnish with complimentary fruit.
