One of my favorite salads is made up of almost any combination of vegetables. I like mine raw but some people like theirs blanched first. I usually use flowerettes of cauliflower and broccoli, diagonally sliced carrots and celery, sliced water chestnuts, sugar peas, zuchini, slices of onions, fresh mushrooms - sliced or quartered etc. I then make up a dressing of 1 part soya sauce (I like a light mushroom soya) 1 part lemon juice and 1 part oil. I have made it without the oil, it's up to you and your fat intake.
P.S.(I have just started joining you people and have been thoroughly enjoying it. I added a few recipes to some of the older requests but I see they are all gone - where did they go?
