My favorite:
Raspberry Vinaigrette (I usually double the amounts)
2 medium cloves garlic 1/4 cup raspberry vinegar 3/4 cup canola oil 4 tsp sugar
I drop the garlic in the food processor, to chop, then add vinegar and oil, then the sugar a teaspoon at a time, not to emulsify, but to blend well.
It's great with any salad, especially a fruit salad or lettuce salad with fruit - an orange or apple, raisins, and pineapple.
