This one is really easy and good too.
KATIE'S MEXICAN CASSEROLE:
Brown 1 lb. ground beef and drain fat.
Mix in 1 to 1 1/2 cups salsa.
Heat through.

Meanwhile, prepare 2 pkgs. macaroni and cheese according to package directions.
(I use less than half of the butter called for and add a little more milk.)
Mix the meat and salsa mixture in with the macaroni and heat through.
If some of the kids are fussy, take some of the plain macaroni and cheese out for them before mixing in the meat.
For the diabetic, all you need to count is the macaroni. One good sized plateful is probably 2 starch exchanges.
