This is a low-fat dressing.
Ginger Sesame Dressing
3 T. seasoned rice vinegar
1 T reduced-sodium soy sauce
4 t. ground arrowroot
2 T. honey
1/3 C. chicken broth, defatted
1/4 C. pineapple juice
2 t. oriental sesame oil
1 t. grated ginger root
1 clove garlic, minced
In a small saucepan, use a wire whisk
to combine the vinegar, soy sauce and
arrowroot. Stir in the honey until smooth.
Then stir in the broth, juice, oil, ginger
and garlic.
Cook and stir over medium heat until
thickened and translucent (maximum thickening
occurs before boiling.) Remove from the heat
and let cool. Refrigerate to store. Stir or
shake before serving.
Makes 1 cup; 8 servings.
