Jack, I found this in a recent magazine, but haven't tried it as yet.
Oriental Cabbage Slaw
1 med. cucumber, halved lengthwise & thinly sliced
1 c. fresh pea pods, halved
1/4 c. rice vinegar
1 T. sald oil
2 t. toasted sesame oil
1/2 t. sugar
1/8 t. salt
1/2 t. red chili paste (optional)
4 c. shredded napa cabbage
1/2 c. coarsely chopped honey-roasted peanuts
In a lg. mixing bowl combine cucumber & pea pods. For dressing, in a small bowl stir tog. vinegar, salad oil, sesame oil, sugar, salt, and red chili paste, if desired. Pour over cucumber & pea pods, stirring to coat. Cover & chill for 4-24 hours. Just before serving, stir in cabbage & peanuts. Makes 8 side-dish servings.
(1 g sat. fat per serving) You can make the entire salad or simply use the dressing recipe!
