Hi Janet,

Here are more to add to Joe's collection. Since you mentioned the recipe you have is a little too sweet and oily, I tried to pull together some lower fat recipes you might be interested in. We'd love the recipe when you get it 'perfected'!

Morning Glory Muffins

DRY:

Stir together:
3/4 c. all-purpose flour
3/4 c. whole wheat flour
1/2 c. bran cereal
1 1/2 tsp. baking powder
1/4 tsp. salt

Stir in:
2 c. grated carrots
1/2 c. grated unpeeled apples
1/2 c. nuts
1/2 c. coconut
1/2 c. raisins (chopped, if desired)

WET:

Beat together:
1/2 c. margarine, melted
1/2 c. packed brown sugar
3 eggs
2 tsp. vanilla

Stir wet mixture lightly into dry mixture just until blended.
Fill greased or paper lined muffin cups 2/3. Bake in 400 degree oven till done.


Morning Glory Muffins

DRY:

Stir together:
2 c. all-purpose flour
2 tsp. baking powder
1/2 tsp. baking soda
1 tbsp. cinnamon
1 tbsp. allspice
1 tsp. nutmeg

Stir in:
4 c. carrots
1 can crushed pineapple, drained
1 apple, shredded
1/3 c. raisins
1/2 c. walnuts
1/3 c. coconut

WET:

Beat together:
2/3 c. vegetable oil
1 c. granulated sugar
1/3 c. brown sugar
2 tbsp. vanilla
4 eggs

Stir wet mixture lightly into dry mixture just until blended.
Fill greased or paper lined muffin cups 2/3. Bake at 350 degrees for 15-20 minutes. Makes 24

1 1/2 c. all-purpose flour
1/2 c. All-Bran cereal
2 tsp. baking powder
1 tsp. cinnamon
1/2 tsp. salt

Stir in:
2 c. grated carrots
1/2 c. diced, peeled apple
1/2 c. raisins, soaked in hot water
1/2 c. chopped walnuts or pecans
1/2 c. flaked coconut

WET:

Beat together:
1 c. granulated sugar
1/4 c. brown sugar
1/2 c. softened margarine
3 eggs
2 tsp. vanilla

Stir wet mixture lightly into dry mixture just until blended.
Fill greased or paper lined muffin cups 2/3. Bake at 350 degrees for 25-30 minutes. Makes 12

1 c. white flour
2 tsp. baking powder
1 tsp. cinnamon
1/2 c. whole wheat flour
1/2 c. All Bran cereal or Bran Buds

Stir in:
2 c. grated carrots
1 c. apples, peeled & chopped
1/2 c. flaked coconut
1/2 c. raisins (presoaked 15 minutes)
1/2 c. walnuts, pecans or sunflower seeds

WET:

Beat together:
3 eggs, beaten
3/4 c. white sugar
1/4 c. brown sugar
1/2 c. margarine, melted
2 tsp. vanilla

Stir wet mixture lightly into dry mixture just until blended.
Fill greased or paper lined muffin cups 2/3. Bake at 350 degrees for 25-30 minutes. Makes 12

1/2 c. raisins, soaked in hot water
1 lg. tart apple, peeled & coarsely grated
1/2 c. sliced almonds

Wet:

Beat together:
1/2 c. oil
1 c. sugar
2 tsp. vanilla
3 eggs

Stir wet mixture lightly into dry mixture just until blended.
Fill greased or paper lined muffin cups 2/3. Bake at 350 degrees for 20 to 22 minutes. Make 18

Stir together:
2 c. whole wheat flour

1 tsp. salt
2 tsp. cinnamon
1 tsp. nutmeg

Stir in:
3 c. shredded carrots
3/4 c. each of coconut, chopped nuts, and raisins

WET:

Beat together:
1 c. honey
1 c. brown sugar
2/3 c. cooking oil
1 c. milk or orange juice
4 beaten eggs
2 tsp. vanilla

Stir wet mixture lightly into dry mixture just until blended.
Fill greased or paper lined muffin cups 2/3. Bake 18 to 20 minutes at 375 degrees.
