I was experimenting with a new soup recipe and accidently did this: turned out great:
1 clove garlic, peeled
1 T butter
dash of salt
1/2 C heavy cream
Simmer garlic in small saucepan with the butter and a sprinkling of s & p for 10-15 minutes until clove is very tender. Pour into the 1/2 C of heavy cream and simmer again over low heat for 5 minutes. Mash the garlic in the cream with a fork. Use in potatoes, sauces, soups or stews as a base.
