Red Rice
4 bacon slices
2 onions, chopped
1 green bell pepper
1 6 oz. can tomato paste
1 1/2 cups of water
2 cups cooked long grain rice
1 T. sugar
2 t. salt
1 t. pepper
Cook bacon in a large skillet over medium heat until crisp; remove bacon, reserving 3T. drippings in skillet. Crumble bacon and set aside. Suate onion and bell pepper in reserved drippings until tender. Stir in tomato paste and next 5 ingredients; cook over low heat 20 minutes or until thickened. Stir in bacon.
Yield: 8 servings
