For those of you with yellow summer squash coming out of your ears, here is a recipe for a pie that will be a real hit, even for the squash haters. If you don't tell them what it is, they'll htink it's a coconut custard pie.
SUMMER SQUASH PIE
ANY PIE CRUST RECIPE (I'M LAZY; I USE A THAWED FROZEN SHELL--REGULAR OR DEEP DISH)
1/2 CUP SUGAR
1/2 STICK MELTED BUTTER OR MARGARINE
1 CUP GRATED RAW YELLOW SQUASH (skin, seeds & all)
3 EGGS
1 ROUNDED TBSP FLOUR
1 TSP LEMON EXTRACT
1 TSP COCONUT EXTRACT
COMBINE ALL INGREDIENTS AND POUR IN UNBAKED PIE SHELL.
BAKE IN 350 DEGREE OVEN 30-35 MINUTES OR UNTIL CRUST IS GOLDEN BROWN.
