A friend just gave me a recipe for a zucchini pie which, for all the world, tastes like a Dutch apple pie.
The filling is:
8-10 C peeled sliced zucchini (I didn't peel mine though)
2/3 C lemon juice
1 C sugar
1 t cinnamon
3/4 t nutmeg
Topping:
2 C flour
1 C sugar
1/4 t salt
3/4 C margarine or butter
1 1/2 t cinnamon
Combine topping ingred as for a pie crust until fine and crumbly.
Cook the zucchini in a sauce pan with the lemon, sugar, and spices and simmer a few min. Then add approx. 1/2 C of the topping mixture to the saucepan to thicken the mixture. When thick, pour into a pie crust and top with remaining topping. Bake for about 35 min @350*
