Thanks for all of the suggestions everyone!

For My kids, I have found that they do not have a lot of time for lunch, or as the case may be they want to get to recess fast with their friends so a lot of food gets dumped. So, I really just give my kids a small portion of everything.
Today, my son had chips and salsa, some cubed cheddar cheese and a cookie. He thought it was great. Its kind of healthy huh? Oh well.

My friends makes the following for her teenage daughter and she and her friends love it. She just puts some cold cooked pasta in plastic container with a handful of frozen mixed vegetables out of the freezer and then puts some salad dressing on top. Debbie, my friend, says the vegetables are thaw by lunch time and it works out great. I asked her what kind of salad dressing she uses and she says whatever is in the frig.

Here are a few recipes:

Thanksgiving Sandwich

1/2 cup chopped turkey meat
2 to 3 T. cream cheese
2 T. cranberry sauce
4 slices whole wheat bread

Mix turkey with cheese and cranberry sauce. Spread on bread.
Makes two sandwiches.

Sandwich-On-A-Stick

8 cubes Jack or Cheddar cheese
8 olives
8 cubes of ham
8 cherry tomatoes
4 small wooden skewers, sharp ends removed

Spear cheese, olive ham and tomato and repeat sequence. Wrap in
plastic wrap and keep cool until serving time.

Ham & Cheese Pillows

1 (3 oz. can) deviled ham
2 T. mayonnaise
1/4 cup Jack cheese, grated
2 small pita pocket bread

Mix ham, mayo and cheese. Spoon into pita pockets. I add some lettuce.

My kids also love banana bread. So I will make a banana bread sandwich with cream cheese or peanut butter in the middle of it. The other thing they like that I make is a cottage cheese dip with veges. I just mix low fat cottage cheese with low fat mayo and add a little garlic salt and pepper. They love to dip veggies in this.

Well here are a few ideas off the top of my head. I just recieved my copy of Fanily Fun and they had some good ideas. I hope this helps someone besides myself. Thanks again for the ideas.
