JD's Dirty Rice 1 pound good ground pork 1 pound good ground round 1 large bell pepper, cut into chunks 1 large onion, cut into chunks 6 cloves of garlic, peeled 2 fresh green cayenne peppers (if in season) 1 tsp ground red cayenne pepper 1 tsp kosher or sea salt (to taste) 2 cans mushroom steak sauce (4 to 6 oz. size; do not use soup mix) 4 cups (or more) cooked rice freshly squeezed lemon or lime juice (optional) Pan fry the meats until well done. Remove the pan with the meat from heat. Put next 3 ingredients into food processer and process until almost liquified. Return the pan with the meat to the heat. Add liquified mixture. Cook on medium high heat for about 5 minutes, stirring. Do not let burn. Reduce the heat to simmer and add in steak sauce and 4 ounces of water. Simmer for about 30 to 45 minutes. Meanwhile, cook your rice. Cool the meat mixture to warm. Add rice. The more rice you add, the lighter and drier your dirty rice. When you serve, you can squeeze fresh lemon/lime juice over each serving. It's your call. Serves 6 Preparation and Cooking Time: 1 hour
