Madge, I requested this same thing last month, and the only way I got close to the actual "Popeye's" taste was by using salt pork with the beans. It gave it a more fatty flavor, and also by using creole seasoning. I am not sure as to where to get that since a friend from New Orleans gave me some. If you ever perfect it let me know. I cannot drive by a Popeyes without stopping for some!!!!!!!!!!!
