This is fairly simple and makes a good scone.
This recipe is from
Buttonwood Inn, Franklin, NC:
Glazed Raisin Scones
2 cups all-purpose flour
1/4 c. sugar
2 1/2 tsp. baking powder
1/2 tsp. salt
1/2 c. butter, slightly softened
3/4 c. raisins
2 eggs
1/4 to 1/3 c. milk
additional sugar, for glaze
Preheat oven to 400 degrees. In large bowl,
mix flour, sugar, baking powder and salt.
Cut in butter until mixture resembles coarse
crumbs. Mix in raisins. In small bowl mix
1 egg and 1 egg yolk; reserve remaining white
in another bowl. Mix eggs into flour mix-
ture. Mix in enough of the milk to make a
dough that holds together. Turn onto lightly
floured surface and knead 5 or 6 times.
Halve dough. Pat each half into a circle 1/2
inch thick. Cut each into 8 triangles.
Place, spaced apart, on lightly greased
baking sheet. With fork beat reserved egg
white until bubbly. Brush scones with white;
sprinkle generously with additional sugar.
Bake 14-18 min. until golden brown.
