JAMBALAYA
2 Tbs Salad Oil
1 lg Onion, chopped
1 cup chopped Green Pepper
2 cloves Garlic, chopped
1 cup cooked Chicken
1 cup diced Ham
1 cup sliced Sausage
2‡ cups peeled cubed Tomatoes
2‡ cups Chicken Broth
1 cup Long-grain White Rice
1 Tbs chopped Parsley
‡ tsp Thyme
1‡ tsp Salt
‡ tsp Hot Pepper Sauce

1. Heat oil in large saucepan. SautÈ onion, green pepper and garlic until tender.

2. Add chicken, ham and sausage. Cook 5 minutes.

3. Adds remaining ingredients. Mix well.

4. Bring to a boil. Cover and reduce heat.

5. Cook approximately 20-25 minutes or until rice is done and liquid is absorbed.

YIELD: 8 Servings.

I may be able to dig up some more if you want additional recipes, as I noted this was in the paper on Thursday, I have no idea, if it is good or not - you decide.
