Here's another one....it comes directly from a C&H powdered sugar box:

Velvet Pound Cake

2 1/4 cups C&H powdered sugar
3/4 cup (1 1/2 sticks) butter or margarine, softened
1/2 tsp. nutmeg or 1/4 tsp. mace
1/2 tsp. vanilla
1/2 tsp. finely grated lemon rind or lemon extract
3 eggs
1 1/2 cups all-purpose flour

Preheat oven to 325 F. Grease 9x5x3" loaf pan. In a large bowl, beat 2 1/4
cups sugar, butter, nutmeg, vanilla and lemon rind until fluffy. Beat in
eggs, one at a time. Beat in flour until smooth. Spread batter in loaf pan
and cut through batter several times with a knife to break large air bubbles.
Bake 60-70 minutes or until toothpick inserted in center comes out clean.
Remove from pan immediately and cool right side up on a rack. Sprinkle with
sugar. (Top of cake will have rough cracks).

Serves 8
