Here's a recipe for Zucchini Parmesan you may want to try:
First, slice some zucchini--about 1/2 a large thinly. Beat 1 egg in a shallow bowl, dip zucchini slices into egg, then into Italian bread crumbs seasoned with some Parmesan cheese. Then I fry the slices in about 1 tbsp. of olive oil, until browned. Preheat your oven to 425 degrees. In a pie plate, place about a cup of prepared spaghetti sauce on the bottom, then layer fried zucchini, mozarella cheese to cover, parmesan, and finish with sauce. Repeat layers finishing with mozarella on top. Bake for about 10 minutes, until cheese is melted and bubbly. Enjoy!
