Jean: Here's a very nutritious casserole...everybody seems to like.... COMPANY CASSEROLE 1 1/2 lb. ground turkey 1/3 C chopped onion 1/3 C chopped green pepper 16 oz. tomato sauce salt and pepper to taste 8 oz. wide egg noodles 8 oz. light cream cheese, cubed 1 C nonfat cottage cheese 1/2 C low-fat plain yogurt In a large skillet, cook meat, onion and green peppers until meat is brown and vegetables are tender. Drain off the liquid, then stir in tomato sauce, salt and pepper. Cook noodles. In a small bowl, combine cheeses and yogurt. Toss mixture with hot cooked noodles. Layer half of the noodle mixture into a 9 x 13" casserole. Spoon meat over center. Layer remaining noodles over meat. Cover and bake at 375 degrees for 30 minutes. Uncover and bake another 10-15 minutes or until bubbly. Serves 6
