I was surfing the net and found this recipe. I am very excited over it cause we do not eat eggs or dairy and all the bread pudding recipes I have found include those ingredients.

OVERNITE BREAKFAST BREAD PUDDING

2 medium applies, peeled, cored and thinly sliced
1/4 cup undiluted apple juice concentrate
1/2 cup raisins
1 pkg. (10.5 oz.) silken tofu
2 cups soymilk
1 1/2 tsp. cinnamon
1/2 tsp. nutmeg
2 tsp. vanilla extract
1/4 cup brown sugar
16 slices soft whole grain - in 1" cubes

Combine the apples, apple juice concentrate and raisins in microwave-safe
dish and cook at full power about 6 or 7 minutes until apples are tender.

In a blender, puree the tofu with the soymilk, spices, vanilla and brown sugar until smooth. Pour into a large mixing bowl and mix with bread and cooked apples including liquid.

Coat 9x13" baking dish with vegetable oil spray. Pour into casserole dish.
Cover and refrigerate overnite or at least one hour.
Next day, bake uncovered for one hour at 350F until set and lightly brown.
About 40 minutes. No need to preheat oven.
