for the famous funnel cakes you can get there.
CARNIVAL FUNNEL CAKES
2 1/2 cups all-purpose flour
2 1/2 tsp. baking powder
1 1/4 tsp. salt
1/4 cup sugar
1 1/2 cups milk
1/3 cup half-n-half
2 eggs, lightly beaten
Vegetable oil
1/2 cup sifted powdered sugar
1 tsp. ground cinnamon
1/8 tsp. ground nutmeg
Combine flour, baking powder, and salt in a medium bowl, stirring well. Add
1/4 cup sugar; stir well to combine. Add milk, half-n-half, and eggs; beat
at medium speed of an electric mixer until smooth. Pour vegetable oil to a
depth of 1/4-inch in a large skillet; heat to 375 F. Cover bottom opening of
funnel with finger. (A funnel with a 3/8-inch opening works best.) Fill
funnel with batter. Hold funnel over skillet. Remove finger from funnel end
to release batter into hot oil; move funnel in a slow, circular motion to form
a spiral. Fry each funnel cake 1 minute or until edges turn golden brown;
turn and fry until golden brown. Drain well on paper towels. Combine 1/2 cup
powdered sugar, cinnamon and nutmeg, stir well. Sprinkle warm cakes with sugar
mixture. Serve warm.
YIELD: one dozen 5-inch cakes
