I canning tomatoes that my husband loves to take for lunch. It is very simple and goes with lots of lunches.
I just chop up large tomatoes or leave small ones whole.
Then I mix some olive oil, salt, pepper, sometimes some garlic or basil to taste.
I put a little fruit fresh to keep color.
Then I put them into jars (jelly jars) and process in boiling water bath for 20 minutes.
It's very easy to grab for lunch.
