Bea, we plant a lot of Tabasco and Cayenne peppers and pickle them in white vinegar. I also chop them in my food processor and freeze them in small bags. If you plan on using them in cooking, the freezing process works just fine. I also chop and freeze hot banana peppers for use in hot cornbread. Lin
