Here are a couple 'dessert type' muffin recipes for you to try.

Cappuccino Chip Muffins
Makes: 12

2 C Flour
3/4 C Sugar
2 1/2 Tsp Baking Powder
1/2 Tsp Salt
2 Tsp Instant Expresso Coffee Powder
1/2 Tsp Ground Cinnamon
1 C Milk -- scald & cool
1 Egg -- lightly beaten
1/2 C Butter Or Margarine -- lightly salted, melt & cool
1 tsp Vanilla
3/4 C Semisweet Chocolate Chips -- mini chips

Preheat oven to 375 degrees F, prepare pans. In a large bowl, stir together flour, sugar, baking powder, coffee, salt & cinnamon. In another bowl, stir together milk, butter, egg & vanilla until blended. Add dry mix to
wet mix until just combined. Stir in chips. Spoon batter in pans & bake for 15-20 mins or until cooked. Makes 12. These muffins freeze well.

Delicious served with Espresso Spread

4 ozs cream cheese softened,
1 Tbsp sugar
1/2 tsp vanilla
1/2 tsp instant espresso powder,
1 oz semisweet chocolate, grated

Place all ingredients in a food processor fitted with a steel blade; process 30 secs, or until smooth, stopping to scrape down sides of container with rubber scraper, if necessary. Serve immediately or cover & refrigerate. To serve, let stand 10 mins at room temperature to soften. Makes approx. 1.1/2 cups.

Banana Mocha Muffins
Makes 2 dozen

2 1/2 c. unsifted flour
1 tsp. baking powder
1/2 tsp. baking soda
1/2 tsp. salt

1 tbsp. instant coffee granules
1 tbsp. hot water
1 1/3 c. ripe mashed bananas (about 3)

1 c. softened butter
1 1/4 c. sugar
1 egg

1 c. semisweet chocolate chips

Preheat oven to 400 degrees F. Grease 2 (12 cup) muffin tins.

1. Stir together flour, baking powder, baking soda, and salt; reserve.
2. Disslove instant coffee in the hot water; stir into mashed banana.
3. Beat butter and sugar in a large bowl until light and fluffy; beat in egg; mix in the banana and coffee mixture.
4. Stir in flour mixture just until blended. Stir in the chocolate chips.
5. Divide equally in prepared muffin tins. Bake at 400 degrees F 15-20 minutes or until done.
